How to make sambhar and soft idli

Sambhar Idli is a delicious South Indian dish that combines soft and fluffy idlis (steamed rice and lentil cakes) with a flavorful and tangy sambhar (spicy lentil stew). Here's a simple recipe for making Sambhar Idli:

Ingredients:

8-10 idlis
1 cup of toor dal (split pigeon peas)
1 small onion, chopped
1 small tomato, chopped
1 carrot, chopped
1 potato, chopped
1/2 cup of chopped beans
2-3 green chilies, slit
1 tbsp of tamarind pulp
1 tbsp of sambar powder
1 tsp of turmeric powder
1 tsp of cumin seeds
1 tsp of mustard seeds
2-3 dried red chilies
A pinch of asafoetida (hing)
Curry leaves
Salt to taste
2 tbsp of oil

Instructions:
1) Cut the idlis into small bite-size pieces and keep them aside.

2) Wash and soak the toor dal for 30 minutes. Then pressure cook the dal with turmeric powder and 2 cups of water until it's soft and cooked.

3) Heat oil in a pan and add mustard seeds. When they start to splutter, add cumin seeds, asafoetida, and dried red chilies.

4) Add chopped onions and green chilies and sauté till the onions turn translucent.

5) Add chopped tomatoes and sauté until they turn mushy.

6) Add chopped vegetables, sambar powder, salt, and tamarind pulp. Mix well and cook until the vegetables are tender.

7) Add the cooked toor dal and bring the mixture to a boil.

8) Simmer for 5-10 minutes until the sambhar thickens.

9) Add the idli pieces to the sambhar and mix gently.

10) Garnish with curry leaves and serve hot.
