Making crispy Spring Rolls
Here is a recipe for vegetarian spring rolls:
Ingredients:
- Spring roll wrappers (about 12)
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 1 cup sliced shiitake mushrooms
- 1 cup sliced bell peppers
- 1 cup sliced onions
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1 teaspoon minced garlic
- Salt and pepper to taste
- Oil for frying
Instructions:
1) In a large bowl, mix together the shredded cabbage, carrots, shiitake mushrooms, bell peppers, onions, soy sauce, sesame oil, ginger, garlic, salt, and pepper.
2) Lay out a spring roll wrapper and spoon about 2 tablespoons of the vegetable mixture onto the center of the wrapper.
3) Fold the bottom of the wrapper up over the filling, then fold in the sides of the wrapper. Roll the wrapper up tightly to enclose the filling.
4) Repeat with the remaining wrappers and filling.
5) Heat oil in a deep frying pan over medium-high heat.
6) Once the oil is hot, carefully add the spring rolls to the pan, seam-side down.
7) Fry the spring rolls until they are golden brown on all sides, turning them occasionally to ensure even cooking.
8) Use a slotted spoon to remove the spring rolls from the oil and drain them on a paper towel.
9) Serve the spring rolls hot with your favorite dipping sauce, such as sweet chili sauce or soy sauce. Enjoy!
