Roasted Makhana Recipe

Roasted Makhana, also known as fox nuts or lotus seeds, is a healthy and delicious snack. Here's a simple recipe to make roasted Makhana:

Ingredients:
2 cups Makhana (fox nuts)
2 tablespoons ghee (clarified butter) or olive oil
1 teaspoon salt (adjust to taste)
1/2 teaspoon black pepper powder (optional)
1/2 teaspoon chaat masala (optional)
1/2 teaspoon turmeric powder (optional)
1/2 teaspoon red chili powder (optional)
A pinch of asafoetida (hing) (optional)
Fresh cilantro leaves (coriander), finely chopped (for garnish)

Instructions:
1) Heat a pan or a wok on medium heat.
Add ghee or olive oil to the pan and let it melt.
Once the ghee/oil is heated, add the Makhana to the pan.
2) Roast the Makhana on medium-low heat, stirring continuously to ensure even roasting. Roast for about 8-10 minutes until they become crispy.
While roasting, you can add salt, black pepper powder, chaat masala, turmeric powder, red chili powder, and asafoetida (hing) to season the Makhana. Adjust the seasonings according to your taste preferences.
Continue to stir and roast until the Makhana turns crispy and light golden brown in color.
3) Once roasted, turn off the heat and let the Makhana cool down.
4) Transfer the roasted Makhana to a bowl and let it cool completely.
5) Garnish with fresh cilantro leaves (coriander) for added flavor and serve.
6) Roasted Makhana is a versatile snack, and you can customize the seasonings according to your preference. You can also add other spices like cumin powder, garlic powder, or any other herbs and spices you enjoy.
