Malai Chaap Recipe

Malai chaap is a popular Indian vegetarian dish made with marinated and grilled pieces of soy chaap (a meat substitute) in a creamy and flavorful gravy. Here's a recipe to make malai chaap:
Ingredients:

For the chaap:
  • 500 grams soy chaap (available in Indian grocery stores)
  • 1 cup hung curd (thick yogurt)
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon garam masala
  • 1 tablespoon chaat masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons oil for cooking

For the gravy:
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1/2 cup cashew nuts, soaked in warm water
  • 1 tablespoon ginger-garlic paste
  • 1/2 cup fresh cream
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons ghee (clarified butter)
  • Fresh coriander leaves for garnish

Instructions:
1) In a bowl, combine hung curd, ginger-garlic paste, garam masala, chaat masala, turmeric powder, red chili powder, and salt. Mix well to form a smooth marinade.

2) Add the soy chaap pieces to the marinade and coat them evenly. Let it marinate for at least 1 hour (or overnight in the refrigerator) to allow the flavors to infuse.

3) Preheat your grill or barbecue. Grill the marinated chaap pieces on medium heat until they are nicely charred and cooked through. You can also cook them on a stovetop grill pan or bake them in the oven at 180°C (350°F) for about 20-25 minutes.

4) Heat oil in a pan and add chopped onions. Sauté until the onions turn golden brown.

5) Meanwhile, drain the soaked cashew nuts and grind them into a smooth paste.

6) Add ginger-garlic paste to the pan with onions and sauté for a minute until fragrant.

7) Add tomato puree and cook until the oil separates from the mixture.

8) Add turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for another 2-3 minutes.

9) Stir in the cashew paste and cook for a few more minutes until the gravy thickens.

10) Reduce the heat to low and add fresh cream. Stir well to combine.

11) Add the grilled chaap pieces to the gravy and mix gently, ensuring that the pieces are well-coated with the creamy sauce. Simmer for 5-7 minutes, allowing the flavors to blend together.

12) In a separate small pan, heat ghee. Once the ghee is hot, remove it from heat and pour it over the malai chaap. This step adds extra flavor and richness to the dish.

13) Garnish with fresh coriander leaves.

Your delicious malai chaap is now ready to be served. Serve it hot with naan, roti, or rice, along with some mint chutney and onion rings. Enjoy!
