Here's a delicious vegetarian lasagna recipe for you:

Ingredients:

  • - 9 lasagna noodles
  • - 2 tablespoons of olive oil
  • - 1 onion, chopped
  • - 2 cloves of garlic, minced
  • - 1 red bell pepper, chopped
  • - 1 zucchini, chopped
  • - 8 ounces (225 grams) of mushrooms, sliced
  • - 1 can (14 ounces) of crushed tomatoes
  • - 1 can (6 ounces) of tomato paste
  • - 1 teaspoon of dried basil
  • - 1 teaspoon of dried oregano
  • - 1/2 teaspoon of salt (or to taste)
  • - 1/4 teaspoon of black pepper (or to taste)
  • - 2 cups of ricotta cheese
  • - 2 cups of shredded mozzarella cheese
  • - 1/2 cup of grated Parmesan cheese
  • - 2 tablespoons of chopped fresh basil (optional)


Instructions:

1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set it aside.

2. Cook the lasagna noodles according to the package instructions until they are al dente. Drain and set them aside.

3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for about 2 minutes until they become fragrant and slightly softened.

4. Add the red bell pepper, zucchini, and mushrooms to the skillet. Cook for about 5-7 minutes until the vegetables are tender.

5. Stir in the crushed tomatoes, tomato paste, dried basil, dried oregano, salt, and black pepper. Simmer the sauce for about 10 minutes, allowing the flavors to meld together. Taste and adjust the seasonings if needed.

6. In a medium bowl, combine the ricotta cheese and 1 cup of shredded mozzarella cheese. Mix well.

7. Assemble the lasagna: Spread a thin layer of the vegetable sauce on the bottom of the greased baking dish. Arrange 3 lasagna noodles on top. Spread about 1/3 of the ricotta cheese mixture over the noodles, followed by 1/3 of the remaining vegetable sauce. Repeat these layers two more times, ending with a layer of vegetable sauce on top.

8. Sprinkle the remaining 1 cup of shredded mozzarella cheese and grated Parmesan cheese over the top of the lasagna.

9. Cover the baking dish with foil, making sure it's loosely tented so it doesn't touch the cheese. This will prevent sticking. Place the dish in the preheated oven and bake for 25 minutes.

10. Remove the foil and bake for an additional 20-25 minutes, or until the lasagna is bubbling and the cheese is golden brown.

11. Let the lasagna cool for a few minutes before serving. This will help the layers set and make it easier to slice. Garnish with chopped fresh basil if desired.
