Chole Bhature Recipe

Chole bhature is a popular North Indian dish consisting of spicy chickpea curry (chole) served with deep-fried bread (bhature). Here's a recipe to prepare this delicious dish:

Ingredients for Chole (Chickpea Curry):

  • 1 cup dried chickpeas (soaked overnight and boiled until tender)
  • 2 medium onions, finely chopped
  • 2 tomatoes, pureed
  • 2-3 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnishing

Ingredients for Bhature (Fried Bread):
  • 2 cups all-purpose flour (maida)
  • 1/2 cup yogurt (curd)
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Salt to taste
  • Oil for deep frying
  • Instructions:

Chole (Chickpea Curry):

  • Heat oil in a pan or pressure cooker. Add cumin seeds and let them crackle.
  • Add finely chopped onions and sauté until they turn golden brown.
  • Add ginger-garlic paste and green chilies. Sauté for a minute.
  • Add tomato puree and cook until the oil separates from the masala.
  • Add coriander powder, turmeric powder, red chili powder, and salt. Mix well.
  • Add boiled chickpeas and cook for 5-10 minutes, allowing the flavors to blend.
  • Mash a few chickpeas with the back of a spoon to thicken the curry.
  • Add garam masala and mix well. Cook for another 2-3 minutes.
  • Garnish with fresh coriander leaves. Chole is ready!
  • Bhature (Fried Bread):
  • In a large mixing bowl, combine all-purpose flour, yogurt, sugar, baking powder, baking soda, and salt.
  • Mix the ingredients well and knead into a soft dough. Add water if necessary.
  • Cover the dough with a damp cloth and let it rest for at least 1 hour.
  • After resting, knead the dough again for a few minutes.
  • Divide the dough into small balls and roll them into round or oval-shaped discs.
  • Heat oil in a deep pan for frying.
  • Carefully slide the rolled dough into the hot oil and fry until the bhature puffs up and turns golden brown.
  • Remove the fried bhature from the oil and place them on paper towels to drain excess oil.
serve hot chole with freshly fried bhature. You can also serve chole bhature with pickles, sliced onions, and a side of yogurt. Enjoy this delicious North Indian dish!
