Creamy Malai Kofta Recipe

Malai Kofta is a delicious Indian dish made with creamy and flavorful dumplings (koftas) served in a rich tomato-based gravy. Here's a recipe for Malai Kofta:

For Koftas (Dumplings):

Ingredients:

  • - 2 medium-sized potatoes, boiled and mashed
  • - 1/2 cup paneer (Indian cottage cheese), grated
  • - 2 tablespoons all-purpose flour
  • - 2 tablespoons cornflour
  • - 1/2 teaspoon garam masala
  • - 1/2 teaspoon red chili powder
  • - Salt to taste
  • - Oil for deep frying


Instructions:

1. In a mixing bowl, combine the mashed potatoes, grated paneer, all-purpose flour, cornflour, garam masala, red chili powder, and salt. Mix well to form a smooth dough-like mixture.

2. Divide the mixture into small portions and shape them into round balls or oval-shaped dumplings.

3. Heat oil in a deep pan or a deep fryer. Deep fry the koftas in hot oil until they turn golden brown and crispy. Remove and drain on a kitchen towel to remove excess oil.


For Gravy:

Ingredients:

  • - 2 tablespoons ghee or oil
  • - 1 large onion, finely chopped
  • - 2 teaspoons ginger-garlic paste
  • - 2 tomatoes, pureed
  • - 1/2 teaspoon turmeric powder
  • - 1 teaspoon red chili powder
  • - 1 teaspoon ground coriander
  • - 1/2 teaspoon garam masala
  • - 1/2 cup heavy cream
  • - 1/4 cup cashew nuts, soaked in warm water for 15 minutes
  • - Salt to taste
  • - Fresh cilantro leaves for garnish


Instructions:

1. Heat ghee or oil in a pan over medium heat. Add the finely chopped onion and sauté until it turns golden brown.

2. Add the ginger-garlic paste and cook for a minute until the raw smell disappears.

3. Add the tomato puree and cook for 2-3 minutes until the oil starts to separate from the mixture.

4. Reduce the heat to low and add the turmeric powder, red chili powder, ground coriander, garam masala, and salt. Mix well to combine the spices with the tomato mixture.

5. In a blender, grind the soaked cashew nuts into a smooth paste. Add the cashew paste to the pan and cook for a few minutes.

6. Add the heavy cream to the pan and mix well. Simmer the gravy for a few minutes to allow the flavors to meld together.

7. At this point, you can adjust the consistency of the gravy by adding water if needed. Simmer for a few more minutes.

8. Gently add the fried koftas to the gravy and coat them with the sauce.

9. Garnish with fresh cilantro leaves.
