Kids Favourite Pinwheel Sanwich Recipe

Here's a vegetarian pinwheel sandwich recipe for you:

Ingredients:

  • - 4 large flour tortillas (you can use whole wheat or spinach tortillas for a healthier option)
  • - 1/2 cup cream cheese, softened
  • - 1/4 cup mayonnaise
  • - 1/4 cup finely chopped vegetables (such as bell peppers, carrots, cucumbers, or spinach)
  • - 1/4 cup chopped black olives
  • - 1/4 cup chopped fresh herbs (such as basil, parsley, or cilantro)
  • - Salt and pepper to taste

Instructions:

1. In a small bowl, mix together the softened cream cheese and mayonnaise until well combined. Season with salt and pepper to taste.

2. Lay out one flour tortilla on a flat surface. Spread a thin layer of the cream cheese mixture evenly over the tortilla, leaving a small border around the edges.

3. Sprinkle a tablespoon of finely chopped vegetables, chopped black olives, and fresh herbs evenly over the cream cheese mixture.

4. Starting from one end, tightly roll up the tortilla, keeping the filling ingredients secure. Repeat this process with the remaining tortillas and ingredients.

5. Once all the tortillas are rolled, use a sharp knife to slice each roll into pinwheels, about 1 inch thick.

6. Arrange the pinwheels on a serving platter or plate, and secure them with toothpicks if needed.

7. Serve immediately, or cover and refrigerate until ready to serve. Pinwheel sandwiches can be made a few hours in advance and stored in the refrigerator.

Feel free to customize the vegetable fillings based on your preferences or what you have available. You can add other vegetables like shredded carrots, sliced cucumbers, or baby spinach leaves for added crunch and flavor. Enjoy your veggie pinwheel sandwiches!
