Making Crunchy and yummy Golgappe or Pani Puri

 Golgappa, also known as Pani Puri or Puchka, is a popular Indian street food snack that consists of crispy hollow puris filled with a mixture of flavored water, tamarind chutney, chickpeas, potatoes, and spices. Here's a recipe to make Golgappa at home:


Ingredients:

For the Golgappa puris:
  • 1 cup semolina (sooji/rava)
  • 1/4 cup all-purpose flour (maida)
  • 1/4 teaspoon salt
  • Water (as needed)
  • Oil for deep frying
For the filling:
  • 1 cup boiled chickpeas
  • 1 cup boiled and mashed potatoes
  • 1/2 cup finely chopped onions
  • 1/2 cup tamarind chutney
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon chaat masala
  • Salt to taste
  • Fresh coriander leaves, finely chopped (for garnish)
For the flavored water (pani):
  • 2 cups cold water
  • 1/4 cup tamarind chutney
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon chaat masala
  • 1/2 teaspoon black salt
  • 1/2 teaspoon chili powder (optional)
  • Fresh mint leaves, finely chopped
  • Fresh coriander leaves, finely chopped
Instructions:

For the Golgappa puris:

  • In a mixing bowl, combine semolina, all-purpose flour, and salt.
  • Gradually add water and knead to form a stiff dough. Cover it with a damp cloth and let it rest for 20-30 minutes.
  • Divide the dough into small portions and roll them into small circles.
  • Heat oil in a deep pan or kadai over medium heat for deep frying.
  • Once the oil is hot, carefully drop the rolled puris into the oil and fry them until they turn golden brown and crispy.
  • Remove the puris from the oil using a slotted spoon and place them on a kitchen paper towel to absorb excess oil. Let them cool completely.
For the filling:

  • In a bowl, combine boiled chickpeas, mashed potatoes, finely chopped onions, roasted cumin powder, chaat masala, and salt. Mix well.
  • Set aside the tamarind chutney for serving.
For the flavored water (pani):

  • In a large bowl, combine cold water, tamarind chutney, roasted cumin powder, chaat masala, black salt, chili powder (optional), mint leaves, and coriander leaves. Mix well to make the flavored water.
To assemble the Golgappa:

  • Take a Golgappa puri and make a small hole on the top using your thumb or finger.
  • Fill the puri with a spoonful of the filling mixture (chickpeas and potatoes).
  • Drizzle a little tamarind chutney into the puri.
  • Dip the filled puri into the flavored water (pani) and place it on a serving plate.
  • Serve immediately and continue making and serving Golgappas in the same way.
Your delicious Golgappas are now ready to be enjoyed! Serve them fresh and crispy, and let your guests add extra tamarind chutney or flavored water as per their preference.
