Making Masala Uttapam
Uttapam is a popular South Indian dish that is similar to a pancake or dosa. It is made with a fermented batter of rice and lentils and is typically topped with various vegetables. Here's a simple Uttapam recipe:
Ingredients:
- - 1 cup idli rice (parboiled rice)
- - 1/4 cup urad dal (skinned black lentils)
- - 1/4 teaspoon fenugreek seeds (optional)
- - Salt to taste
- - Oil or ghee for cooking
- - Chopped vegetables (onions, tomatoes, bell peppers, etc.)
Instructions:
1. Soak the idli rice, urad dal, and fenugreek seeds in water separately for about 4-6 hours. Make sure to use enough water to cover them.
2. After soaking, drain the water from the rice and dal. Transfer the rice to a blender or wet grinder and grind it to a smooth batter. Add water as needed to get a thick, pourable consistency.
3. Similarly, grind the urad dal and fenugreek seeds to a smooth and fluffy batter. You may need to add some water while grinding.
4. Mix both the rice and dal batters together in a large bowl. Add salt to taste and mix well. The batter should be slightly thick but pourable. Cover the bowl with a lid or plastic wrap and let it ferment overnight or for about 8-10 hours.
5. After fermentation, the batter will rise and become slightly fluffy. Give it a gentle stir.
6. Heat a non-stick pan or tawa on medium heat. Grease it with a little oil or ghee.
7. Take a ladleful of the batter and pour it onto the center of the pan. Spread it gently in a circular motion to form a thick pancake-like shape.
8. Sprinkle some chopped vegetables (onions, tomatoes, bell peppers, etc.) evenly on top of the uttapam. Press them gently into the batter.
9. Drizzle a little oil or ghee around the edges of the uttapam and on top of the vegetables. Cover the pan with a lid and cook for a few minutes until the bottom turns golden brown.
10. Flip the uttapam gently using a spatula and cook the other side for a couple of minutes until it is cooked through.
11. Remove the uttapam from the pan and repeat the process with the remaining batter and vegetables.
12. Serve hot uttapam with coconut chutney, sambar, or any chutney of your choice.
