Pav Bhaji Recipe

 Pav Bhaji is a popular street food dish from India, particularly from Maharashtra. It consists of a spicy and flavorful vegetable curry served with soft buttered pav (bread rolls). Here's a recipe to make Pav Bhaji at home:



Ingredients:

For the Bhaji:

  • - 4 medium-sized potatoes, boiled and mashed
  • - 1 cup mixed vegetables (such as carrots, peas, cauliflower, beans), boiled and mashed
  • - 1 large onion, finely chopped
  • - 1 large tomato, finely chopped
  • - 1 capsicum (bell pepper), finely chopped
  • - 2 tablespoons butter
  • - 1 tablespoon oil
  • - 1 tablespoon ginger-garlic paste
  • - 2 teaspoons Pav Bhaji masala
  • - 1 teaspoon red chili powder
  • - 1/2 teaspoon turmeric powder
  • - Salt to taste
  • - Fresh coriander leaves, finely chopped (for garnish)
  • - Lemon wedges (for serving)


For the Pav:

  • - 8 Pav (bread rolls)
  • - Butter for toasting the Pav


For the garnish:

  • - Finely chopped onions
  • - Fresh coriander leaves
  • - Lemon wedges

Instructions:

For the Bhaji:

1. Heat butter and oil in a large pan or kadai over medium heat.

2. Add chopped onions and sauté until they turn translucent.

3. Add ginger-garlic paste and sauté for a minute until the raw aroma disappears.

4. Add chopped tomatoes and cook until they become soft and mushy.

5. Add Pav Bhaji masala, red chili powder, turmeric powder, and salt. Mix well and cook for a couple of minutes to allow the spices to blend.

6. Add the mashed potatoes and mashed mixed vegetables. Mix everything together, ensuring the vegetables are well coated with the spices.

7. Cook the Bhaji for 8-10 minutes, stirring occasionally, until all the flavors are well combined and the mixture is thickened. If it seems too dry, you can add a little water.

8. Turn off the heat and garnish the Bhaji with fresh coriander leaves.

For the Pav:

1. Slit each Pav horizontally, but not all the way through.

2. Heat a tawa or griddle over medium heat and spread a little butter on it.

3. Toast the Pav on the tawa until they turn light golden brown and crispy on the edges. Flip and toast the other side as well.

4. Remove the Pav from the tawa.

To Serve:

1. Serve the hot Bhaji with toasted Pav.

2. Garnish the Bhaji with finely chopped onions, fresh coriander leaves, and a squeeze of lemon juice.

3. Serve extra butter on the side if desired.

4. Serve Pav Bhaji with lemon wedges for individuals to squeeze over their serving as per taste.
