Royal Navratna Korma Recipe

 Navratna Korma is a delicious and flavorful Indian dish that combines a variety of vegetables, fruits, and nuts in a creamy sauce. It is a popular vegetarian dish and is often served as a main course in Indian cuisine. Here's a recipe to help you make Navratna Korma at home:

Ingredients:

  • - 1 cup mixed vegetables (carrots, peas, cauliflower, green beans, etc.), diced
  • - 1 medium-sized onion, finely chopped
  • - 1 medium-sized tomato, chopped
  • - 1/2 cup mixed fruits (pineapple, apple, pomegranate seeds, etc.), diced
  • - 1/4 cup cashew nuts
  • - 1/4 cup raisins
  • - 1/4 cup sliced almonds
  • - 1/4 cup chopped cashews
  • - 1/4 cup chopped pistachios
  • - 1/4 cup chopped walnuts
  • - 1/2 cup yogurt, whisked
  • - 1/2 cup milk or cream
  • - 2 tablespoons ghee (clarified butter)
  • - 1 teaspoon cumin seeds
  • - 1 teaspoon ginger-garlic paste
  • - 1 teaspoon turmeric powder
  • - 1 teaspoon red chili powder
  • - 1 teaspoon garam masala
  • - 1/2 teaspoon ground cardamom
  • - Salt to taste
  • - Fresh coriander leaves for garnishing


Instructions:

1. Heat ghee in a pan or skillet over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

2. Add the chopped onions and sauté until they turn golden brown.

3. Add the ginger-garlic paste and cook for another minute until the raw smell disappears.

4. Add the diced mixed vegetables to the pan and stir-fry for a few minutes until they are partially cooked.

5. Add the chopped tomatoes and cook until they become soft and mushy.

6. Reduce the heat to low and add the whisked yogurt, turmeric powder, red chili powder, and salt. Stir well to combine all the ingredients.

7. Cover the pan and cook for about 5-7 minutes until the vegetables are tender and the flavors are well blended.

8. Add the mixed fruits, cashew nuts, raisins, sliced almonds, chopped cashews, pistachios, and walnuts. Mix well and cook for another 2-3 minutes.

9. Stir in the milk or cream, garam masala, and ground cardamom. Simmer for a few more minutes until the korma thickens slightly.

10. Remove from heat and garnish with fresh coriander leaves.
