Smooth and Creamy Shahi Paneer Recipe
Here's a recipe for Shahi Paneer, a rich and creamy paneer dish popular in Indian cuisine:
- 200 grams paneer, cut into cubes
- 2 tablespoons ghee or clarified butter
- 1 medium onion, finely chopped
- 2 tomatoes, pureed
- 1 tablespoon ginger-garlic paste
- 1/4 cup cashews, soaked in warm water
- 1/4 cup fresh cream
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1/2 teaspoon cardamom powder
- 1/2 teaspoon kasuri methi (dried fenugreek leaves)
- Salt to taste
- Fresh coriander leaves, for garnish
Instructions:
- Heat ghee in a pan or kadai over medium heat. Add the chopped onions and sauté until they turn golden brown.
- In a blender, grind the soaked cashews into a smooth paste. Set aside.
- Add the ginger-garlic paste to the sautéed onions and cook for a minute until the raw smell disappears.
- Add the tomato puree to the pan and cook for 2-3 minutes until the mixture thickens slightly.
- Now, add the turmeric powder, red chili powder, and garam masala to the pan. Mix well and cook for a minute.
- Add the cashew paste to the pan and stir it into the gravy. Cook for a couple of minutes to incorporate the flavors.
- Gradually pour in the fresh cream and mix well. Cook for another 2-3 minutes until the gravy thickens and becomes creamy.
- Add salt, cardamom powder, and kasuri methi to the gravy. Stir well to combine.
- Gently add the paneer cubes to the gravy and cook for 2-3 minutes, allowing the paneer to absorb the flavors.
- Turn off the heat and garnish with fresh coriander leaves.
