Soft and Sweet Malpua Recipe
Here's a simple recipe for Malpua, a popular Indian sweet dish:
Ingredients:
- 1 cup all-purpose flour (maida)
- 1/4 cup semolina (sooji)
- 1/2 cup condensed milk
- 1/4 cup milk
- 1/4 teaspoon cardamom powder
- A pinch of saffron strands (optional)
- Oil or ghee (clarified butter) for frying
- Chopped nuts (such as almonds, pistachios) for garnish
- Sugar syrup for soaking (optional)
Instructions:
1. In a mixing bowl, combine the all-purpose flour and semolina. Add the condensed milk and milk, and mix well to form a smooth batter. The consistency should be thicker than pancake batter but not too thick.
2. Add the cardamom powder and saffron strands to the batter and mix well. Let the batter rest for 15-20 minutes to allow the flavors to meld together.
3. Meanwhile, heat oil or ghee in a deep frying pan or kadai over medium heat. The oil/ghee should be hot but not smoking.
4. Take a ladleful of the batter and pour it into the hot oil/ghee. You can make small or medium-sized malpuas depending on your preference. Fry them until they turn golden brown and crisp on both sides. Flip them carefully using a slotted spoon to ensure even frying.
5. Once the malpuas are cooked, remove them from the pan and drain the excess oil/ghee on a kitchen towel or paper towel.
6. If desired, you can soak the malpuas in sugar syrup for a few minutes to enhance the sweetness and texture. To make the sugar syrup, combine equal parts sugar and water in a saucepan and heat until the sugar dissolves completely. Allow the syrup to cool slightly before adding the malpuas.
7. Garnish the malpuas with chopped nuts of your choice, such as almonds or pistachios. Serve them warm or at room temperature.
Malpuas can be enjoyed as is or served with rabri (sweetened condensed milk), yogurt, or even a scoop of ice cream for a delightful dessert. Enjoy!
