Spongy Gulab Jamun Recipe
Here's a recipe for Gulab Jamun, a popular Indian sweet:
Ingredients:
For the Gulab Jamun:
- 1 cup milk powder
- 1/4 cup all-purpose flour
- 1/4 teaspoon baking powder
- 2 tablespoons ghee (clarified butter)
- 2-3 tablespoons milk (as needed to make the dough)
- A pinch of cardamom powder
- Chopped nuts (like almonds, pistachios) for garnishing
For the Sugar Syrup:
- 2 cups sugar
- 2 cups water
- A few saffron strands (optional)
- 1 teaspoon rose water or a few drops of rose essence
Instructions:
1. In a mixing bowl, combine the milk powder, all-purpose flour, baking powder, and cardamom powder. Mix well.
2. Add the ghee to the mixture and rub it in with your fingers until the mixture resembles breadcrumbs.
3. Gradually add milk, a little at a time, and knead the mixture to form a soft and smooth dough. The dough should be slightly sticky but manageable. Add more milk if needed.
4. Divide the dough into small equal-sized portions and shape them into smooth balls. Make sure there are no cracks on the surface of the balls.
5. In a deep pan, heat oil or ghee for deep frying over medium heat. The oil should be hot but not smoking.
6. Gently slide the prepared dough balls into the hot oil, a few at a time. Fry them until they turn golden brown, stirring occasionally for even cooking. Make sure to fry them on medium heat to ensure they cook through without being too dark on the outside and undercooked on the inside.
7. Once they are golden brown, remove the fried Gulab Jamuns from the oil using a slotted spoon and drain the excess oil.
8. In another pan, prepare the sugar syrup. Add sugar and water to the pan and bring it to a boil. Stir until the sugar is completely dissolved.
9. Optional: Add a few strands of saffron to the syrup for flavor and color.
10. Simmer the syrup for about 5-6 minutes until it slightly thickens. Turn off the heat and add rose water or rose essence. Stir well.
11. Add the fried Gulab Jamuns to the warm sugar syrup and let them soak for at least 30 minutes. You can also soak them longer for a more syrupy texture.
12. Garnish with chopped nuts like almonds and pistachios.
13. Serve Gulab Jamuns warm or at room temperature. They taste great on their own or with a scoop of vanilla ice cream.
