Srikhand Recipe

 Here's a simple recipe for Srikhand, a popular Indian dessert made from strained yogurt and flavored with cardamom and saffron.

Ingredients:

2 cups Greek yogurt or strained yogurt (hung curd)
1/2 cup powdered sugar (adjust according to taste)
1/4 teaspoon cardamom powder
A pinch of saffron strands
1 tablespoon warm milk
Chopped nuts (almonds, pistachios) for garnishing
Few strands of saffron for garnishing (optional)

Instructions:
In a small bowl, soak the saffron strands in warm milk and set aside for a few minutes to infuse the color and flavor.
In a large bowl, take the strained yogurt (hung curd) and add powdered sugar to it. Mix well until the sugar dissolves completely.
Add the cardamom powder to the yogurt mixture and mix well.
Add the saffron-infused milk to the yogurt mixture and mix until it is well incorporated.
Once the mixture is smooth and well combined, cover the bowl and refrigerate it for at least 2-3 hours to allow the flavors to meld together and for the Srikhand to chill.
Before serving, give the Srikhand a good stir to make it creamy and smooth. If it appears too thick, you can add a little milk to achieve the desired consistency.
Garnish the Srikhand with chopped nuts like almonds and pistachios. You can also sprinkle a few strands of saffron on top for added flavor and presentation.
Serve the chilled Srikhand in individual bowls or glasses as a dessert. It can be enjoyed on its own or paired with puris (deep-fried Indian bread) for a traditional combination.
