Vegetable Manchurian Recipe

Here's a recipe for Vegetable Manchurian, a popular Indo-Chinese dish:


Ingredients:

For Manchurian Balls:

  • - 1 cup finely chopped mixed vegetables (carrots, cabbage, bell peppers, beans, etc.)
  • - 1/2 cup all-purpose flour
  • - 1/4 cup cornflour
  • - 1 tablespoon ginger-garlic paste
  • - 1 tablespoon soy sauce
  • - 1 teaspoon red chili sauce
  • - Salt to taste
  • - Oil for deep frying

For Manchurian Sauce:

  • - 1 tablespoon oil
  • - 1 tablespoon finely chopped garlic
  • - 1 tablespoon finely chopped ginger
  • - 1/4 cup finely chopped onions
  • - 1/4 cup finely chopped bell peppers
  • - 2 green chilies, finely chopped (adjust according to your spice preference)
  • - 2 tablespoons soy sauce
  • - 1 tablespoon tomato ketchup
  • - 1 tablespoon red chili sauce
  • - 1 tablespoon vinegar
  • - 1 teaspoon sugar
  • - 1/2 teaspoon black pepper powder
  • - 1 cup vegetable stock or water
  • - 2 tablespoons cornflour mixed with 1/4 cup water
  • - 2 spring onions, chopped (white and green parts separated)
  • - Salt to taste


Instructions:

For Manchurian Balls:

1. In a mixing bowl, combine the finely chopped vegetables, all-purpose flour, cornflour, ginger-garlic paste, soy sauce, red chili sauce, and salt. Mix well to form a sticky mixture.

2. Shape the mixture into small, bite-sized balls. If the mixture is too dry, you can add a little water to bind it together.

3. Heat oil in a deep pan or wok. Deep fry the vegetable balls in hot oil until they turn golden brown and crispy. Remove and drain on a kitchen towel to remove excess oil.


For Manchurian Sauce:

1. Heat 1 tablespoon of oil in a wok or pan. Add the chopped garlic and ginger. Sauté for a minute until they turn fragrant.

2. Add the chopped onions, bell peppers, and green chilies. Stir-fry over high heat for a few minutes until the vegetables are slightly softened.

3. Add soy sauce, tomato ketchup, red chili sauce, vinegar, sugar, black pepper powder, and salt. Mix well.

4. Add vegetable stock or water to the pan and bring it to a boil.

5. In a small bowl, mix the cornflour with water to make a slurry. Slowly add the cornflour slurry to the boiling sauce while stirring continuously. Cook for a few minutes until the sauce thickens.

6. Add the fried vegetable balls to the sauce and toss well, ensuring they are coated evenly. Cook for another couple of minutes until the balls are heated through.

7. Garnish with the green parts of the spring onions.


Your Vegetable Manchurian is now ready to be served! It pairs well with steamed rice or noodles. Enjoy!
